1. Properties and characteristics of Picual olive oil
Let’s see the most important characteristics of the picual variety.
a) Agronomics:
The picual olive tree is very vigorous and resistant to drought. Also, this varietal is has a easy mechanization, because its olives have a big size and easy detachment.
b) Olive
This variety produce medium size olive and they have a early maduration, in November and December in North Hemisphere. Also, the olive give high yield, about 28 % of olive oil.
c) Picual olive oil taste:
The picual extra virgin olive oil is a oil with a great personality. It has a robust intensity with extraodinary aromatic aroma and some bitterness and itching. In tasting notes of fig tree and fresh wood can be appreciated.
Furthermoere, the picual extra virgin olive oil has a high content of oleic fatty acids, a monounsaturated fat with a very high nutritional interest. Also, this olive oil has a high content of antioxidants, polyphenols and tocopherols. a) Which variety has the most pungency and bitterness?
The Picual variety, along with Cornicabra, has the strongest pungency and bitterness. However, you should not expect too much pungency and bitterness. Furthermore, Jaén oils, particularly those from the San Benito brand and Luis Benito from Sierra Mágina, are among the most pungent and bitter.
b) Which oils have a greener color?
The green color is due to chlorophyll, which is more present the earlier the oil is milled. For this reason, those with a greener color include the early harvest selection from Oro del Desierto and the Picual from Oro Bailén and Oro de Cánava.
c) Which is better, Picual or Arbequina?
It depends on the intended use and personal preference. However, considering the amount of antioxidants and its stability, Picual is generally better.
