1. Features of the Empeltre variety
a) Agronomy:
The olive trees of the variety empeltre are vigorous, of erect bearing. Its productivity is high and with little variation. The olive is of medium size with little resistance to detachment, that is to say, a variety of easy mechanization.
b) Oil:
The empeltre extra virgin olive oil is distinguished by its great smoothness. In tasting, fruity flavors of green apple and vanilla are appreciated, with no spiciness or bitterness.
Its content of oleic acid, a monounsaturated fatty acid is medium, high in polyunsaturated fatty acids and antioxidants, giving this oil a medium stability.
2. Recommendations:
These oils are perfect for very mild flavored dressings for salads and cooked vegetables. It is the most suitable variety for confectionery and mayonnaise.
