1. Olive mill of Oro Bailen
The Oro Bailén oil mill is located in the town of Bailén in the province of Jaén and began milling oil in 2002. This oil mill began milling the Picual variety, later incorporating the Arbequina variety, and finally, a few years ago, it incorporated two more varieties, the Hojiblanca and the Frantoio.
a) Location of the oil mill
The Bailen Gold Mill is located in the town of Bailen in the province of Jaén. This municipality is at the gates of Andalusia, behind the Despeñaperros at the foot of the Sierra Morena. One of the municipalities of the province of Jáen, privileged for the development of the olive grove. Also, a territory with a high ecological value due to its great wealth of fauna and flora typical of the Mediterranean climate. Therefore, a privileged place for the production of extra virgin olive oil.
b) Orographic characteristics
Bailén is located at an altitude of about 400 meters above sea level. It also enjoys a Mediterranean climate with continental nuances, with long, dry summers and short, mild winters with moderate rainfall. Thanks to these climatic characteristics, olive oils with unique peculiarities are produced, the Oro Bailen oil.

c) History
The owners of Oro Bailen were involved in brick making before they went into the olive oil sector. However, in 2002 they diversified their business and started to produce olive oil. Later, in the year 2015, they created the limited company Galgón 99.
2. Arbequina and Picual Oro Bailen
The Oro Bailén extra virgin olive oil oil mill produces four varieties of extra virgin olive oil: arbequina, picual, hojiblanca and frantoio. The last two varieties have been recently extracted.
- Picual: an oil with a bright green colour, luminous and intense. In tasting it has an aroma of fresh olive together with ripe fruit flavours. Likewise, the aromas of green banana, almond and green tomato stand out. In short, a very balanced oil with a great complexity of aromas.
- Arbequina: A very fruity oil with very marked aromas of freshly cut grass, apple and ripe banana.
- Frantoio: The oil of the hojiblanca variety is a medium intensity oil. Also, in tasting it stands out for its futal aromas, vegetables to green apple, kiwi, almond, pine nuts and grass.
- Hojiblanca: An oil of medium intensity. In tasting it stands out for its aromas of green apple, tomato and almond. Also, but to a lesser extent, aromas of mint, blackberry and other wild plants. Finally, in the mouth a slight bitterness and spiciness can be appreciated, mainly at the end of the throat.

- Guide Flos Olei 2017: In this guide he obtained a score of 98 points out of 100. A guide that is edited every year by the prestigious Italian-based taster Marco Oreggia.
- The Spanish Ministry of Agriculture, Food and the Environment awarded him the second prize in the category of Sweet Green Fruits in 2017.AVPA International Contest, held in Paris, France in 2017, where he obtained a “Gourmet Product” diploma for his Family Reserve Picual.

b) Olive care

When the olive stalk, the small stem that joins the fruit to the tree, breaks, the olive begins to deteriorate. As a consequence, from the moment the olive is picked up until it is crushed it must be as fast as possible. At Oro Bailén, they have reduced this time to a maximum of two hours.
