1. Denomination of Origin of Sierra de Cazorla
Sierra de Cazorla covers numerous municipalities that are within the protected area of the Natural Park of Sierra de Cazorla, Segura and the Valleys. This Natural Park is located to the east of the province of Jaén
a) Municipalities
The Designation of Origin of Sierra de Cazorla includes the following municipalities: Sonto Tomé, Chilluevar, La Iruela, Cazorla, Peal de BEcerro, Quesada, Hinojares, Pozo Alcón and Huesa.
b) Oil varieties
This Denomination of Origin elaborates two varieties of extra virgin olive oil, the picual and the royal. Both the oil of Sierra de Cazorla of the picual and royal variety, have a great national and international demand.

c) New harvest
The new harvest in Sierra de Cazorla is usually a little late. It usually arrives at the end of December or the beginning of January. However, it is best to call and ask for the new harvest.
With respect to the Picual variety, it will not be so noticeable, but it will be with the Royal variety.
2. Royal olive oil from Cazorla
The extra virgin olive oil of the royal variety is a native variety of Sierra de Cazorla. Also we can find it in some zone of Catalonia and other zones of Spain, but the zone with more extension is here in the region of Cazorla.
a) Organoleptic characteristics
Royal oil is a very harmonious, fruity and balanced variety. Together with the characteristics of the land of Sierra de Cazorla, this oil from Sierra de Cazorla has unique characteristics. Characteristics and peculiarities protected by this Denomination of Origin. This is due to the fact that the olive oils from Sierra de Cazorla come from olive trees that have suffered greater thermal contrasts and a somewhat higher rainfall.
Also, in tasting we can appreciate their smoothness and very light itching and bitterness. On the palate also highlights its balanced and powerful fruit with marked notes of different ripe fruits (apple and kiwi) and freshly cut grass.
Finally, we must mention that the royal variety is taking the recognition it deserves in recent years. For this reason, any gourmet should always have on their table.
3. Picual olive oil from Cazorla
The second variety cultivated here is the picual. This variety is the most cultivated in Spain, and mainly in the provinces of Jaén and Granada. Being Sierra de Cazorla in the province of Jaén, we also find it here.
The olive oil of the picual variety, its notes in tastings are of a powerful flavor, with great personality and with a slight itching and bitterness. Furthermore, in the mouth fruity aromas of freshly cut grass, almond, liquorice, artichoke and tomato can be appreciated.
It should also be borne in mind that the oils from Sierra de Cazorla vary each year in their flavour and spiciness. Since the climatology of each year, gives a different touch to the oil of Sierra de Cazorla.
Finally, Sierra de Cazorla oil is ideal for dishes where you want to highlight the flavor of the oil. An oil that any gourmand or lover of good food should taste.
4. Cazorla Premium Olive Oil
Premium extra virgin olive oils refer to oils harvested at the beginning of the season. Therefore, oils from olives from October and beginning of November.
By preparing the oil at very early dates, it is possible for the olive to be collected completely from the flight. That is, olives that have never been in contact with the ground. As a result, much higher quality olive oil is obtained.
In contrast to the oils collected later, their yields are much lower. As a result, the prices of these premium oils are higher than those collected later.

The Bética cooperative. Firstly, there is the cooperative that supplies us with Sierra de Cazorla oil, both picual and royal. It also produces Premium olive oil of both varieties every year. Its premium oil is packaged under the brand Primus de Pico de Cabañas.
Other Sierra de Cazorla oil brands: There are also other premium oil brands in Sierra de Cazorla such as Castillo de Toya, Vadolivo and Cazorla oils.
