1. Denomination of Origin of Sierra de Cazorla
Let’s read the most important characteristics of the Designation of Origin of Sierra de Cazorla and its extra virgin olive oils.
a) Municipalities
Sierra de Cazorla (Natural park) is he largest nature reserve of Spain. An area of 190.000 hectares that was designated Biosphere Reserve in 1983 by UNESCO. This region includes numerous municipalities that are protected by the Designation of Origin of Sierra de Cazorla, Segura and the Valleys. Municipalities like: Sonto Tomé, Chilluevar, La Iruela, Cazorla, Peal de BEcerro, Quesada, Hinojares, Pozo Alcón and Huesa.
This Natural Park is located to the northwest of Jaén, in Andalusia. Here there is an inmense sea of olives groves.
b) Oil varieties
The Designation of Origin of Sierra de cazorla protects two varieties of extra virgin olive oil; picual and royal. The picual variety is very extended in Jaén and in the rest of Spain. Royal variety is a native olive tree that can be found in a few region more in Spain, one of them in Cazorla.

The new harvest of this olive oils usually comes a little late each year. It usually arrives at the end of December or the beginning of January. However, you can contact us to be informed when the new harvest comes.

2. Royal olive oil from Cazorla
The extra virgin olive oil of the royal variety is a native variety of Sierra de Cazorla. Also we can find it in some zone of Catalonia and other zones of Spain, but Cazorla has the biggest extension of royal olive groves.
a) Organoleptic characteristics
The royal variety is a soft, fruity and balanced olive oil. Also, in tasting we can appreciate their smoothness and very light itching and bitterness. On the palate also highlights its balanced and powerful fruit with marked notes of different ripe fruits (apple and kiwi) and freshly cut grass.

3. Picual olive oil from Cazorla
The picual variety is also cultivated in this region of Jaén. It has the following characteristics.
a) Organoleptic characteristics
The olive oil of the picual olives has a strong taste with great personality and with a slight itching and bitterness. Furthermore, in the mouth fruity aromas of freshly cut grass, almond, liquorice, artichoke and tomato can be appreciated.
It should also be borne in mind that the oils from Sierra de Cazorla vary each year in their flavour and spiciness. Since the climatology of each year, gives a different touch to the oil of Sierra de Cazorla.
Finally, Sierra de Cazorla oil is ideal for dishes where you want to highlight the flavor of the oil. An oil that any gourmand or lover of good food should taste.
4. Cazorla Premium Olive Oil
Furthermore, the cooperatives and mills of this Designation of Origin produce very awarded extra virgin olive oil. We call them premium olive oil.
Usually, the premium extra virgin olive oils refer to oils harvested at the beginning of the harvest. Therefore, oils milled from October and beginning of November.
When the olive oil is made very early, olives are collected only from the trees, if the olives fell on the floor, it is left there. The reason is that when the olive fell from the tree, the olive could be damaged and the olive oil produced with this kind of olives are the lowest quality. However, the yields are lower and the price is higher than the normal extra virgin olive oil.
