1. Bajo Aragon Designation of Origin
The region of Bajo Aragón is located in the northeast of the province of Teruel and southeast of Zaragoza. Lower Aragon is the largest area of olive trees in northern Spain. It also stands out for its enormous wealth of landscape, ecology and culture, occupying a strategic area that connects the Ebro valley with the Mediterranean coastline. In addition, numerous cultures of Iberians, Romans, Arabs and later cultures have settled here.
a) Orography of the Bajo de Aragón region
Lower Aragon can be divided into two morphological zones; a more northerly zone with lower altitudes above 600 metres and a more southern zone with altitudes above 800 metres.
b) Common Flora
The lowest zone with villages like Alcañiz and Valdealgorfa, abundant crops of olive groves, cereals, vines and almonds. This area is dominated by vegetation with a medium-terranean climate, where the following tree species abound: holm oaks, gall oaks and pines. Among the plants and shrubs; lavender, thyme, rosemary and heather. In the higher areas, coniferous and pine forests abound.
c) Climatic characteristics
The climate of Southern Aragon is Mediterranean with continental features, with extreme temperatures in both summer and winter and little rain throughout the year. Although there is a great variation in rainfall between one year and another, we find ourselves with rainy years and years of drought. Likewise, these arid conditions are accentuated by strong evaporation, intense and strong winds, accompanied by large temperature fluctuations.
Therefore, these conditions that harden the olive trees of this region and give a genuine extra virgin olive oil of the Empeltre variety.

d) Bajo Aragón olive groves
The extension of Bajo Aragón is very small in comparison with other areas of Spain. However, its quality and peculiarities make it highly appreciated, especially by foreigners.

Many varieties of olive trees are grown in lower Aragon: empelte, royal, arbequina, verdeña, negral, manzanilla and farga, among the most important. Although here we can find many more. However, the only variety that is protected under the denomination of origin is the empeltre.

3. Oil of the Empeltre variety
Empeltre extra virgin olive oil is one of the softest extra virgin oils, with very soft fruity notes of freshly cut grass, apple and green almond.
These extra virgin olive oils are ideal for making sweets, such as muffins and biscuits. The great cooks also recommend them for the elaboration of mayonnaise.
