Gazpacho Cordobés

For the end of this summer we offer you this delicious recipe “Gazpacho cordobés”, made with extra virgin olive oil from Priego de Córdoba and other natural, organic and high quality products. A typical dish from Córdoba and the rest of Andalusia.

A simple and quick recipe to make. Gazpacho is typical for hot days, as it is refreshing and moisturizing, but we can make it all year round.

Ingredients:

1 kg of ripe tomatoes

1 Onion

1 Cucumber

1 clove of garlic

2 tablespoons of mustard

1 Muscat grape bunch

1 bag of bread sticks

1 red pepper

250 g goat cheese

125 ml of extra virgin olive oil from Priego de Córdoba

Preparation:

Add the tomatoes, onion, cucumber, garlic, red pepper and very fine mince to the mixer.

2. Pass the obtained purée through the sieve. Then add the extra virgin olive oil and correct with salt.

3. Serve cold, adding the grapes, the goat cheese cubes and the skewers.

4. Garnish with a dash of extra virgin olive oil from Priego de Córdoba and drops of mustagre.
