The aroma of this lemon honey is very characteristic and unique, due to the presence of an aromatic substance called methyl anthranilate, which when tasted reminds the taste of the lemon flower. Its intensity and persistence vary according to the growing area. The sensation in the mouth is different from orange blossom honey.
Lemon honey tends to crystallize quickly with a fine grain size
Like all honey, lemon honey has a great antiseptic and bactericidal capacity. Specific components of the lemon blossom give it properties to fall asleep and improve the pain of angina and pharyngitis.
Lemon honey is recommended for use in salted and marinated fish and meat products.

Raw lemon honey is bottled in a glass jar which, when crystallised, can take on white colours on the surface due to its natural crystallisation. To convert it to a liquid state, we must put it at a temperature of about 50 º C, and the best way is to the bain-marie. Once liquid, put it in a warm place so that it does not crystallize again.
The honey is usually put two years of preferential consumption, but if well preserved, endures a lifetime.
