Almond honey tends to crystallize, but when it does, it takes on a somewhat coarse grain size. When crystallizing it can form two phases, because this honey contains some sucrose that does not crystallize well
Almond honey has the typical properties of honey; antiseptic, moisturizing and bactericidal. Specific components of the almond tree make this honey an ideal food to strengthen the liver and improve the circulatory system.
Orange blossom honey is ideal for use in salted and marinated fish and meat products.

The raw almond honey of Sala e Higón is bottled in a glass jar that when crystallized can take on the surface white colors due to its natural crystallization. If we want it to be in a liquid state, the way in which less properties will be lost is in the bain-marie. Once the honey is completely liquid, keep it in a warm place. Cool temperatures accelerate its new crystallization
The honey is usually put two years of preferential consumption, but if it is well preserved, endures a lifetime if it is well preserved. The best way to preserve honey is to close the bottle and store it in a dry place and out of the reach of light. The light can charge vitamins and other nutrients of the honey, and the humidity can make the honey ferment, giving it an unpleasant flavor and making it lose its bactericidal properties.
