Thyme honey has an intense flavour, as in other honeys of the labiada family, a persistent flavour and with clear phenolic components. In the mouth, its sweet taste is appreciated with acid notes, although it can present salty notes if the harvest is later and it has been mixed with some secretion of holm oak myelates, taking the thyme honey darker colors.
Thyme honey is harvested in late spring and summer. The harvest is negatively affected by cold, rain and drought.

Thyme honey is recommended for pairing raw fish with sashimi tartare, roasted fish and reduced sauces.

Raw thyme honey is bottled in a glass jar which, when crystallised, can take on white colours on the surface due to its natural crystallisation.
The honey is usually put two years of preferential consumption, but if it is well preserved, endures a lifetime.

Mi abuelo fue apicultor en Asturias, (aun lo recuerdo con los antiguos trajes blancos, sus guantes hasta los codos y el humo que echaba a las colmenas para sacar los panales y evitar que le picasen). Por esta razón, es para mi es super importante tener siempre una buena miel en casa. Para ello, me molesto en mirar, probar e informarme sobre la miel que compro. Hace un año fui a Sigüenza, y pasé por varios pueblos; Torija, Brihuega y alguno más. En Brihuega conocí a este apicultor, sorprendiéndome del sabor de su miel. Ahora la compro aquí. Una miel que no tiene nada que ver con las que venden en las grandes superficies.
