Lavender honey has a very light amber colour, the lighter it is the more lavandin or Ajedrea (Satureja montana) it has, and the darker it is the darker it contains the more honeydews from holm oaks.

Lavender honey is harvested from late spring to summer.

The ecological honey of cantueso is bottled in a jar of crystal that when crystallizing can take on the surface white colors due to its natural crystallization. If it is solidified, to pass it to its liquid state we must heat it to the bain-marie, until it becomes completely liquid. Once it is liquid, keep it in a warm place.
The honey is usually put two years of preferential consumption, but if well preserved, endures a lifetime.
