If we find these two phases in raw loquat honey, this is a peculiarity of this product. In case we find this, stir the honey well with a spoon until it is homogeneous and the phases are not distinguished.

Another peculiarity of its crystallization is that it forms thick and irregular crystals that can remind us of the texture of sugar, but it has nothing to do with white sugar.
