Arbutus honey has a dark amber to brown colour, which when crystallised takes on a light brown to reddish-brown colour.

Arbutus honey has a very peculiar aroma, being one of the most bitter Spanish honeys produced, and the fresher it is, the more bitter it is. The bitterness of honey is due to a compound produced by the flower of this shrub, the heterosides.
Crystallization
Arbutus honey crystallizes rapidly with a coarse grain size.

Like all of them, strawberry tree honey has bactericidal and antifungal properties. Specific components of the strawberry tree, the heterosides provide it with an aniseptic and genital action. Traditionally it has been used for its astringent and antiseptic properties, being very indicated for the dierrhea and for the good functioning of the liver.

Arbutus honey is ideal for pairing fresh cheeses, chocolate mousse and sweetening coffee, enhancing its bitterness. This honey is usually used for the elaboration of artisan vinegars of honey.
