History
The method of the capachos and press, is the method that was used formerly to obtain olive oil. The new technology has improved and professionalized this method, and it is the one used by the great majority of cooperatives and oil mills.
In the past, once the olives had been washed and selected, they were taken to the mill, where the olives were crushed. After this process, the crushed olive mass is taken to the press in order to separate the virgin olive oil from the rest of the components of the olive. The press was formed by a pile of capachos and between each capacho the uniform mass of the olive was placed and once all the capachos were filled, they were pressed with the press, and the virgin olive oil was filtered by the capachos. Inside the mats was the alperujo, the leftover mass, the stone and the pulp of the olive.
Nowadays this method is in disuse, for several reasons; the oil takes flavors of nylon, when the virgin olive oil is in contact with the capachos; greater oxidation of the virgin olive oil for having greater contact with the oxygen and being the slower process; greater consumption of water and production of pollutants; discontinuous process; etc.
