Wine is a beverage obtained from grapes (fruit of the vine, Vitis vinifera) and through a process of alcoholic fermentation of its juice or must. This metabolic fermentation is produced by yeast, which transforms the sugars found in the must into ethanol and carbon dioxide, thus transforming the must into wine.

1. Composition of the wine
Wine made from grape must consists mainly of water, sugars, acids (malic and tartaric) and ethanol from alcoholic fermentation. During alcoholic fermentation, a large part of the sugars in the must are transformed into ethanol, and this process leaves other components, such as glycerin, behind.
Other components that are in very small quantity but are very interesting from the traditional point of view would be the tannins, which come from the grape skin.
Other components are usually added to the wine artificially to add stability to the wine. Substances that stabilize wine compounds (proteins, tartrate crystals, etc.), that increase the life of wine (ascorbic acids, an antioxidant) and antimicrobial agents (sorbic acids, sorbates, benzoic acid and fumaric acid).

a) Jerez:
The designation of origin of Jerez is located in the province of Cadiz in Andalusia. The natural conditions of these places for the development of the wine, its genuineness and its own identity have been consummated in this Denomination of Origin, one of the oldest in Spain and which brings together Jerez and numerous municipalities around it.
The Denomination of Jerez can also be seen with other names or translations that have been given; sherry, Xèréz, or Manzanilla.
b) Montilla Moriles:
The Designation of Origin of Montilla Moriles is located in the province of Cordoba, limited between the rivers Genil and Guadajoz to the east and west, and by the river Guadalquivir to the north and south by the Sierra Subbeticas of the denomination of the extra virgin olive oil of Priego de Cordoba.
The varieties of this denomination come from native vines, the Pedro Ximenz variety and other varieties such as Moscatel, Chardonnay, SauvignonBlanc, Verdejo, Irén, Baladíy Macabeo.
c) Ribera del Duero:
The name of Ribera del Duero includes municipalities in the provinces of Burgos, Segovia, Soria and Valladolid.
