1. Vinegar properties
Gourmet vinegar is a product made from wine or cider and has many benefits for our health. Its low acidity promotes digestion. Its high concentration of nutrients and minerals, the same that come from wine, makes it a product of high nutritional value.
Vinegar is a very acidic compound that helps us digest. It contains a large amount of vitamins from the wine or cider for which it was obtained.
On the other hand, we recommend not using vinegar or lemon to whiten teeth. With the acidity of the vinegar or lemon we must be careful because the acid corrodes the enamel of the teeth, that is to say, it whitens them but at the cost of losing our teeth.
2. Composition
The vinegar will contain acetic acid from the fermentation of alcohol and the nutrients in the wine: antioxidants, vitamins and minerals.
3. Types of vinegar: wine vinegar and others.
Wine vinegars: Among the wine vinegars, we have the following at your disposal:
a) Sherry Vinegars
Sherry vinegars are the most famous in Spain for their unmistakable aroma and flavour.
The sherry vinegars that you will find in our shop come from a meticulous selection of sherry wines that were aged by the traditional system of Criaderas and Soleras in American oak barrels.
In this selection of sherry vinegars we also offer reserve vinegars that have been stored in oak barrels to give them more powerful and marked flavors.
Sherry vinegars are ideal for the production of dressings for salads, vinaigrettes and gazpacho.
b) Pedro Ximenez Vinegars
The Pedro Ximenez vinegars are made from the Pedro Ximenez variety of sweet grapes, and following the traditional method of Sherry wines, the’Soleras y Criaderas’ method. Before the Pedro Ximenez wine is made, the grapes are exposed to the sun so that they are raisined and their sweetness is increased. The sweet, aromatic and soft wine is used to make vinegar with Pedro Xiemenez.
We recommend the Pedro Ximenez vinegar to prepare any dish and dressing with extra virgin olive oil, desserts, game, duck and beef.
c) Balsamic vinegars
The balsamic vinegars are elaborated with sherry wines and following artisan and traditional methods of elaboration. Being matured in oak barrels from Canada and France, they give it an exquisite bouquet. Balsamic vinegar, a dense, bittersweet vinegar, is ideal for preparing roasts, stews and complex sauces.
d) Modena Vinegars
One of the most famous vinegars in the world for its sweetness and flavour, Modena vinegar. A vinegar of Italian origin from Modena and surrounding villages. The artisan Modena vinegar, which is the one we sell, comes from several varieties of wine; reds and whites and different grape varieties.
Modena vinegar is ideal for preparing salad dressings to accompany a good extra virgin olive oil and for preparing desserts.
e) Apple vinegars
Apple vinegar is a vinegar made from cider, that is, wine made from apples.
People also use them to make natural cosmetics creams.
In our shop in Cortijuelo San Benito we sell quality vinegars, as many are sold as vinegars, but what is really sold is acetic acid.
